Vegetable Manchurian





 



As I had said earlier a few days back I was just craving for Indian Chinese food which we don't get here in Australia so I decided to make some myself.Back in India before getting married I used to make Veg Hakka noodles and Manchurian at home which my brother used to just love and that was the only thing i knew to prepare then. I hadn't made Manchurian for a long time so decided to make it last week.Luckily i got all the ingredients.Here goes the recipe
Ingredients:
Shredded carrot- 1 cup
Shredded cabbage- 1 cup
green beans very finely chopped-1/2 cup
Spring Onion- 1/2 cup chopped
Garlic-ginger paste-1/2 tsp
Garlic finely chopped-1-2 big tbsp
Ginger finely chopped- 1 tbsp
green chillies finely chopped-1/2 tsp
black pepper-1/4 tsp
chilli sauce-1/2 tsp
soy sauce-1/2 cup
cornstarch / Cornflour-1/2 cup
Maida-1 tsp
Oil for frying
salt
Method
To make Manchurian Balls
1.Boil the shredded cabbage, carrot and fine green beans for 5 mins till just tender.Do not over cook them. Drain all the water and keep aside.
2.To this mixture of cabbage, carrot and green beans add the 1/2 tsp ginger garlic paste,black pepper powder 1/4 tsp, salt,1/2 tsp chilli sauce ,1 tbsp cornstarch and maida .
3.Mix all together till u get a dough and you can make small balls out of the same.
4.Heat oil in a wok and fry the balls till golden brown.Remove and keep aside.
To make Manchurian Sauce/Gravy
1. Heat 1-2 tbsp oil in the wok or you can use oil left from frying the Manchurian balls .When hot add chopped garlic, ginger and green chillies and saute on medium heat for 1-2 mins.
2. Now add 1-2 tbsp chopped spring onion and saute for 1 min on medium flame.To this add 1/4 cup dark soy sauce, 1/4 tsp black pepper powder, salt and sugar .Saute for a minute.Add 1/2 cup water and simmer for 2 mins.
3. Now take the corn starch in a bowl and add little water to it to make a paste.
4.When the above mixture starts to boil add the corn flour mixture little at a time till u get desired semi thick consistency.Do not add the entire corn flour starch at one time else sauce will become very thick and sticky.
5.Let this mixture simmer for 2 mins till the cornflour paste is dissolved and now add the fried manchurian balls to this mixture and let is simmer on low heat for 2-3 mins.
6.Finally when serving garnish with spring onion greens.
Serve hot with fried rice or noodles.
