Dry Chilly potato

This is my first post in this blog and after much pondering I zeroed on this particular recipe which i would like share with everyone.The inspiration behind this recipe has been a dish (Chilly idly dry) which is served in a restaurant in Mumbai.So here goes the ingredients followed by the recipe.I don't have any photos to upload at the moment but will definitely upload some snaps the next time I make this dish.
Ingredients:
3 medium sized potatoes cut as french fries ( U can also use the ready to fry frozen french fries one gets in supermarkets)
Chopped spring onion 2 tbsp
Chopped juvenile capsicum 2tbsp
Tomato ketchup 2tbsp
Chilly sauce 1 tbsp
Soya Sauce 1 tbsp
Vinegar 1 tsp
Red chilli powder 1/4tsp
sugar 1/2 tsp
Garlic finely chopped 1-2 tbsp
Ginger finely chopped 1 tsp
green chillies finely chopped 1tsp
Cornfour 1 tbsp
Salt
Black pepper powder 1 -2tsp
Oil for frying

Recipe:
1. In a bowl combine the potatoes, 1 tsp of garlic , 1/2 tsp ginger, 1tsp blackpepper powder , some salt and cornflour .Just add very little water to make it little moist.
2. Heat Oil in a wok till it become hot and then put the marinated potatoes in the wok and fry till crispy and golden brown.
3.Once all the potatoes are fried remove from the wok and keep aside.
4.In the same oil now add the remaining garlic, ginger and green chillies and fry on medium to high flame till you get a nice aroma of the garlic .
5. Next add Capsicum and onion whites and saute for 3-4 minutes on medium to high flame.
6.Now add the tomato ketchup, soya sauce, chilly sauce, vinegar, red chilly powder (if needed), black pepper powder and sugar.
7.Mix well to coat the vegetables in the sauce and now finally add the fried potatoes, salt.
8.Mix well to coat and add salt if required.Before serving just add the spring onion greens.

For making the actual chilly idly dry just substitute the potatoes with leftover idli cut in thin long strips.
